ระบบอักษรจีน

ระบบอักษรของภาษาจีนได้บันทึกในรูปการเขียนแบบภาษาจีนกลาง ระบบอักษรของภาษาจีนได้มีการพัฒนามาจากชนชาติจีนซึ่งมีวัฒนธรรมที่โดดเด่นและสำคัญ
ระบบอักษรของภาษาจีน เป็นตักอักษรที่มีประวัติศาสตร์อันยาวนาน บนโลกใบนี้เดิมยังมีอักษรสุเมเรียนและอักษรอิยิปต์ แต่หลังจากนั้นก็ได้ดับสูญไป แต่ทว่าระบบอักษรของจีนก็ได้ถูกรักษาให้สือต่อเรื่อยมา ระบบของภาษาจีนมีอักษรเป็นสัญลักษณ์พื้นฐาน รูปร่าง น้ำเสียง เพื่อเชื่อมให้ประโยคสมบูรณ์ กลายมาเป็นตัวอักษรรูปสี่เหลี่ยมที่มีลักษณะพิเศษจำเพาะเป็นรูปแบบการเขียนของตัวอักษร

ต้นกำเนิดของระบบอักษรของภาษาจีน
ในอดีตชาวจีนมักใช้การผูกปมในการบันทึกเหตุการณ์ แต่การผูกปมก็ยังไม่ใช่ระบบอักษรของภาษาจีน ต่อมาก็ๆได้สืบทอดกันมารุ่นต่อรุ่นจนถึงชางเจี๋ย(仓颉) {เสนาบดีของหวงตี้(黄帝) ปฐมกษัตริย์ของจีนซึ่งเสวยราชย์ระหว่างก่อน ค.ศ. 2704-2594} ได้ประดิษฐ์อักษรเพื่อเป็นคำแถลงการณ์ ชางเจี๋ย(仓颉) ก็ได้เงยหน้าขึ้นมองดวงดาวและได้เรียงลำดับเป็นรูปร่างของสรรพสิ่ง ก้มหัวลงมองรอยเท้าบนพื้นของนกและสัตว์ต่างๆ ก็ทำให้คิดและสร้างสรรค์ตัวอักษรจีนออกมาเป็นสัญลักษณ์ภาพ ทุกวันนี้มองดูคำแถลงฉบับนี้ก็ยากที่จะทำให้คนเชื่อถือ เพราะว่าการผลิตตัวอักษรต้องใช้เรื่องราวที่ผ่านมาเป็นระยะเวลานานในการพัฒนาขั้นตอน ทำให้คนคนเดียวประดิษฐ์ตัวอักษรออกมาไม่สามารถที่จะเป็นเหตุการณ์ได้ ความถูกต้องของคำแถลงก็ควรจะเป็น: ระบบอักษรภาษาจีนเป็นของชนชาติฮั่นที่ร่วมกันสรรค์สร้างขึ้นมา

จุดกำเนิดของอักษรจีนมาจากรูปวาด

ผู้เขียนที่ทำงานศึกษาในทางโบราณคดีในชนบทพื้นที่ลาดเอียงของซีอาน (西安) และ (临潼姜寨) ก็พบเศษเครื่องปั้นดินเผาเป็นจำนวนมากที่บรรจงวาดสัญลักษณ์เครื่องหมายไว้ สัญลักษณ์เหล่านั้นมีอายุมากกว่า 6000 ปีมาแล้ว ตั้งแต่ช่วงสมัยวัฒนธรรมของหยางเซา (仰韶文化) บรรจงวาดไว้ 4000 กว่าปีที่ผ่านมา เป็นการดำรงชีวิตของคนเขตพื้นที่ ซานตงไท่อั้น (山东 泰安) และยังบรรจงวาดสัญลักษณ์ลงบนเครื่องปั้นดินเผา (มองภาพได้จากเครื่องปั้นดินเผา(大汶口)ที่มีการบรรจงวาดสัญลักษณ์ไว้ ) ผู้เชี่ยวชาญเข้าใจตักอักษร “旦”(ยามรุ่งอรุณ) ลองมองดูพระอาทิตย์ที่โผล่พ้นของฟ้า ได้บอกพวกเขาว่ารุ่งเช้ามาถึงแล้ว ผู้เชี่ยวชาญเชื่อว่าสัญลักษณ์ที่บรรจงวาดในเครื่องปั้นดินเผาอาจจะเป็นจุดเริ่มต้นของระบบตัวอักษรจีน
ปัจจุบันได้ค้นพบตัวอักษรที่เจริญเติบโตมาก่อนกว่า 3000 ปี ในราชวงศ์ถัง(商代) คือเจี๋ยกู่เหวิน (甲骨文) หรืออักษรที่จารบนกระดูกสัตว์ ซึ่งได้เขียนอักษรลงไปในกระดองเต่าหรือกระดูกสัตว์ เจี๋ยกูเหวิน(甲骨文) เหมือนภาพวาด พวกเขาพบเจี๋ยกูเหวิน(甲骨文) กว่า 150000 แผ่น ทั้งกว่า 4600กว่าอันทำตัวอักษรไม่ซ้ำกัน ซึ่งประมวลออกมาได้มากกว่า 1700 ตัวอักษร เจี๋ยกูเหวิน(甲骨文) รวมเป็นวลีจำนวนมากและเป็นรูปประโยคอย่างง่าย นั่นก็ทำให้พวกเราจัดให้ว่าสถานการณ์หรือเหตุการณ์การประดิษฐ์ตัวอักษรน่าจะเริ่มต้นมาจากราชวงศ์ซัง(商代)

วิวัฒนาการของระบบอักษรในภาษาจีน

ตั้งแต่อักษร เจี๋ยกูเหวิน(甲骨文) เกิดขึ้น ทำให้พวกเราได้มีตัวอักษรใช้กันจนถึงปัจจุบันนี้ เวลาก็ผ่านไปมากจนทำให้มีการเปลี่ยนแปลงขั้นตอนของตัวอักษร
*ตัวอักษร เจี๋ยกูเหวิน(甲骨文)ในสมัยราชวงศ์ซัง(商代)เหมือนภาพวาด
สมัยราชวงศ์ซัง(商代)และซีโจว(西周) ยังมีเครื่องสำริดที่มีคำจารึกบนเครื่องเหล่านั้น (钟鼎文) เครื่องสำริด จินเหวินหรืออักษรโลหะ （金文）ก็มีคำจารึกเหล่านี้ก็เหมือนภาพวาด
จิ๋นซีฮ่องเต้หรือฉินสื่อหวง (秦始皇) เมื่อรวบรวมจีนเป็นหนึ่งเดียวกัน ตัวอักษรก็มีการทำให้เป็นหนึ่งเดียวกัน ตัวอักษรชนิดนี้เรียกว่า อักษรเสี่ยวจ้วนหรือจ้วนเล็ก（小篆）(เป็นรูปแบบการเขียนตัวอักษรจีนรูปแบบหนึ่ง) เสี่ยวจ้วนหรือจ้วนเล็ก（小篆）เป็นหนึ่งในรูปแบบตัวหนึ่งสือที่สวยมาก
เขียนเสี่ยวจ้วนหรือจ้วนเล็ก（小篆）ในสมัยราชวงศ์ไท่(秦代) ก็ได้ทีการปรับปรุงเสี่ยวจ้วนหรือจ้วนเล็ก（小篆）ให้ดีขึ้น สร้างสรรค์ออกมาให้ง่ายต่อการเขียนเป็น อักษรลี่ซู(隶书) เมื่อมาถึงราชวงศ์ฮั่น(汉代) จึงเป็นรูปแบบตัวอักษรที่ใช้โดยทั่วไป อักษรลี่ซู(隶书) แหกกฎตัวอักษรโบราณที่มีจุดเด่นจนเป็น อักษรข่ายซู （楷书）(ตัวอักษรจีนแบบตัวบรรจง)
อักษรข่ายซู （楷书）ออกมาในช่วงปลายราชวงศ์ฮั่น(汉代) เป็นการนำเอาพื้นฐานของ อักษรลี่ซู(隶书) มาก่อรูปจนเป็นอักษรข่ายซู （楷书）ระบบการเขียนตัวอักษรของจีนเป็นรูปสี่เหลี่ยมก็เริ่มเป็นรูปทรง อักษรข่ายซู （楷书）ก็ได้ใช้มาจนถึงปัจจุบัน ก็เป็นรูปแบบตัวอักษรที่ได้มาตรฐานที่ใช้กันมายาวนาน
นอกจากอักษรลี่ซู(隶书) ยังมีรูปแบบตัวอักษรอีกแบบหนึ่งที่ใช่พู่กันเขียนอย่างรวดเร็วเรียนว่าอักษรเฉ่าซู（草书）;อักษรข่ายซู （楷书）ปรากฏแล้ว ยังมีรูปแบบตัวอักษรอีกอย่างหนึ่งที่ปรากฏคืออักษรสิงซู （行书）
ตัวอักษรจีนมีต้นกำเนิดมาจากภาพวาดกว่า 3000 ปี เรื่องราวที่ผ่านมาของเจี๋ยกูเหวิน(甲骨文) จินเหวินหรืออักษรโลหะ （金文）อักษรเสี่ยวจ้วนหรือจ้วนเล็ก（小篆） อักษรลี่ซู（隶书） อักษรข่ายซู （楷书）ก็พัฒนาไปตามขึ้นตอน จากรูปร่างของภาพวาดก็ค่อยๆเปลี่ยนเป็นขีดเส้นเบี่ยง ตวัด ที่ประกอบกันเป็นตัวหนังสือ ก็เหมือนกับรูปร่างที่เปลี่ยนเป็นสัญลักษณ์ จากสลับซับซ้อนก็เปลี่ยนเป็นแบบง่าย
ตัวอักษรจีนมีประมาณกว่า 6 หมื่นตัว ใช้บ่อยประมาณ 3 พันกว่าตัว

วิธีการผลิตระบบอักษรจีน

วิธีการผลิตระบบอักษรจีนที่สำคัญมี 4 อย่างคือ อักษรภาพ象形字อักษรแสดงความหมาย指事字อักษรรวมกัน 会意字 และหลักในการประกอบเป็นตัวหนังสือจีน(ทั้งรูปและเสียง)
*อักษรภาพ象形字เป็นรูปแบบของอักษรหนึ่งที่บรรยายถึงเค้าโครงสิ่งต่างๆภายนอก เช่น日ยรือ เหมือนพระอาทิตย์ , 月 เย่ว เหมือนกับพระจันทร์, 山 ซาน เหมือนกับยอดเขา,鹿 ลู่เหมือนกับลูกกวางกำลังวิ่ง......
*อักษรแสดงความหมาย指事字ตัวอักษรแสดงความคิดในเชิงนามธรรม เช่น คำว่า刃อยู่ด้านนอกของคมมีด แสดงว่านี่คือใบมีดที่คม,一 อี หนึ่ง, 二 เอ้อ สอง,三 ซาน สามแสดงให้เห็นถึงการนับอย่างง่าย 本 และ末 แสดงให้เห็นถึงความไม่เหมือนกันของต้นไม้ส่วนรากและส่วนยอดไม้... อักษรแสดงความหมาย指事字มีน้อยมาก
อักษรภาพ象形字และอักษรแสดงความหมาย指事字เป็นโครงสร้างโดดเดี่ยวตามลำพัง ไม่สามารถอยู่กันได้ถึง 2 ตัวอักษร เรียกว่า ตัวอักษรเดี่ยว(独体字)
*อักษรรวมกัน 会意字เป็นการนำเอาตัวอักษร 2 หรือมากกว่ามาประกอบเป็นตัวอักษรใหม่ แสดงให้เห็นถึงความหมายใหม่ เช่น 休 ก็คือ 人รวมกับ 木 2 ตัวอักษรมารวมกัน จึงหมายถึงคนอิงอาศัยต้นไม้ แสดงให้เห็นถึงการพักผ่อน, 明ก็เกิดจาก 日พระอาทิตย์ กับ 月พระจันทร์ หมายถึงแสงสว่าง, 林กับ森 ก็คือ木 2 และ 3 ตัวมารวมกัน แสดงให้เห็นว่ามีต้นไม้มาก, 采 ด้านบนก็มาจาก 瓜 ข้างล่างก็มาจาก 木แสดงให้เห็นว่าใช้มือเด็ดผักผลไม้จากต้นไม้........ อักษรรวมกัน (会意字) ก็คือ อักษรโครงสร้างประสม(合体字)
อักษรภาพ象形字อักษรแสดงความหมาย指事字และอักษรรวมกัน 会意字 เหล่านี้ไม่มีการเปลี่ยนเสียงตัวประกอบ อักษรเหล่านี้เป็นเจ้าของตัวอักษรของตัวมันเอง
*อักษรภาพและเสียง形声字ตัวอักษรชนิดนี้คือตัวอักษรข้างหนึ่งให้ความหมายที่มาจากรูปร่าง ส่วนอีกข้างหนึ่งให้เสียง เช่น เครื่องดนตรีโบราณ 竽 ใช้ไม้ไผ่ทำ จึงใช้ตัวอักษร 竹(ไม้ไผ่) มาใช้เป็นรูปตัวอักษรแสดงความหมาย(形旁) ส่วนตัวอักษรที่แสดงเสียง(声旁)ก็ใช่ 于 สร้างคำใหม่ก็ได้คำว่า 竽อักษรภาพและเสียง形声字 ก็เป็นอักษรโครงสร้างประสม(合体字) อีกประเภทหนึ่ง
อักษรภาพและเสียง形声字 ได้ทำลายวิธีการสร้างตัวอักษรแบบเดิมๆ ทำให้สามารถสร้างตัวอักษรได้เป็นจำนวนมาก ระบบอักษรของจีนกว่า 90% ขึ้นไปเป็น อักษรภาพและเสียง形声字
ตัวอักษรแสดงความหมาย(形旁) และตัวอักษรที่แสดงเสียง(声旁) ในอักษรภาพและเสียง形声字 มีรูปแบบการรวบรวมอยู่ 6 แบบ
ระบบอักษรของภาษาจีนเป็นอักษรเก่าแก่ของโลกมีผู้ใช้อย่างน้อย 12 ร้อยล้านคน ตอนนี้ตัวอักษรของจีนยังอ่านยาก เขียนยากจำยากเป็นปัญหาอย่างมาก ในอนาคตก็คงจะมีการปรับรูปแบบให้ง่าย เป็นการปฏิรูปตัวอักษรที่สำคัญ ปัจจุบันตัวอักษรจีนก็ได้เข้าสู่คอมพิวเตอร์ได้สำเร็จ เผยให้เห็นถึงสิ่งที่จะเกิดขึ้นของตัวอักษรได้อย่างกว้างใหญ่ไพศาล สามารถเชื่อถือได้ ตัวอักษรจีนก็จะคงอยู่ต่อไปและจะเป็นอารยะธรรมของมนุษยชาติที่มีคุณูปการอย่างมาก

ในประเทศจีนมีเครื่องดื่มที่แพรหลายอยู่ชนิดหนึ่ง นั่นก็คือชา “เมื่อเปิดบ้านทุกบ้านจะต้องเจอสิ่งของ 7 สิ่ง ฟืน ไม้ น้ำมัน เกลือ เครื่องปรุงรส น้ำส้มสายชู ชา” เป็นสิ่งสำคัญในการดำรงชีวิตของชาวจีน ทุกวันดื่มชา ว่างก็ดื่มชา แขกมาก็ยกชา ไปเยี่ยมเพื่อบ้านก็เอาชาไปฝาก นี่ก็เป็นประเพณีและความเคยชินของชาวจีนมากว่าพันปี การชงชาก็เป็นศิลปะอันเก่าแก่แขนงหนึ่ง

ประเทศจีน ---- บ้านเกิดของใบชา

ประเทศจีนเป็นต้นกำเนิดของชา ในโลกใบนี้ประเทศจีนก็ค้นพบและนำชาไปใช้ก่อนประเทศอื่น
ในยุคโบราณต้นชาเกิดจากการรวบรวมของผู้คนที่ผ่านมาเก็บผลไม้ป่า ผักป่า การค้นพบโดยบังเอิญจากการเก็บผลไม้ป่า ผักป่า ชาในต้นแรกก็เป็นยาชนิดหนึ่ง เรียกว่า “” ประเทศจีนมีเทพนิยายที่บอกเล่ากันมา ชื่อว่า “เสินหนงเทพแห่งกสิกรรม ในวันหนึ่งๆจะชิมสมุนไพรเป็นร้อยชนิด ก็โดนพิษไปกว่า 72 ชนิด แต่โดนพืชชนิดหนึ่งมาช่วยถอนพิษคือใบชา” เสินหนงเป็นวีรบุรุษในยุดนั้น เขาเป็นคนกล้าที่จะลองกินพืชชนิดต่างๆ เพื่อยืนยันว่าพืชชนิดไหนกินได้หรือกินไม่ได้ จนไปถึงใบชา การใช้ใบชารักษาโรค เมื่อนานเข้าก็พบว่าใบชาไม่เพียงแต่รักษาโรคได้ ยังสามารถดับกระหายได้และยังมีกลิ่นหอม ทำให้ชาเป็นเครื่องดื่มทั่วไปที่มีคนนิยม จากยาก็ข้ามมาเป็นเครื่องดื่มมีอายุกว่า 2000 ปีมาแล้วในสมัยราชวงศ์ซีและฮั่น (西汉时期)
การดื่มชาพบครั้งแรกในเขตตะวันตกเฉียงใต้ คนทั่วไปใช้ชาป่า หลังจากนั้นจึงเริ่มมีการเพาะปลูกต้นชาขึ้น ต้นชาก็จะขึ้นได้ดีในอากาศชื่นอบอุ่น ชาที่มีชื่อเสียงก็มาจากภาคใต้ของจีน ทางใต้ การดื่มชาก็จะมีวัฒนธรรมที่พิถีพิถัน คนภาคเหนือไม่ผลิตชา ชาที่ชาวเหนือดื่มมาจากภาคใต้ ปัจจุบันมีกว่า 18 มณฑลที่ปลูกชา ทั้ง 18 มณฑลนี้ก็เป็นแหล่งปลูกชาที่ใหญ่ที่สุดของโลก
ในศตวรรษที่ 7 ใบชาของประเทศจีนก็ได้แพรหลายไปญี่ปุ่น เกาหลีเหนือในศตวรรษที่ 16 เป็นต้นมาชาก็ได้แพร่หลายไปในแถบยุโรป อเมริกาและแอฟริกา ในปัจจุบันอีก 40 กว่าประเทศทั่วโลกชาก็เหมือนกับกาแฟและโกโก้ ก็เป็น 3 อันดับเครื่องดื่มยอดนิยม
คนจีนใช้เวลาในการศึกษา ลงแรง สะสมกรรมาวิธีในการปลูกชา การดื่มชาเยอะมากมาย ซึ่งมีหนังสือที่เขียนถึงชามีมากกว่า 100 ชนิด ก็มีหนังสือของ ลู่หยู่(陆羽) ชื่อว่าคัมภีร์ชา หรือ ฉาจิง (茶经) ก็เป็นหนังสือที่รวบรวมเกี่ยวกับชาไว้มากมาย เป็นหนังสือเล่มแรกที่พูดถึงเรื่องของชาได้กระจ่างที่สุด ผู้คนจึงยกย่องเขาให้เป็น “เซียนใบชา”

ใบชาแต่ละประเภท

ใบชาของประเทศจีนก็มีมากมายหลายประเภท ก็มีชาแดง ชาเขียว ชาอู่หลง ชาดอกไม้ และ ชาอัดแท่ง(紧压茶) ซึ่งชาแต่ละประเภทก็มีกรรมวิธีการทำที่แตกต่างกัน ชาแดง จะผ่านกรรมวิธีคือ การเอาไปหมัก น้ำชาที่ได้จะเป็นสีแดงเข้ม จะสามารถชงได้หลายครั้ง ชาที่มีชื่อคือชา ชาฉีหง จากอานฮุย เป็นต้น
ชาเขียวเป็นชาที่ไม่ผ่านการหมักเลย เอาใบชาที่เก็บมาไปคั่วในกระทะร้อนจนแห้ง น้ำของชาที่ได้จะมีสีเขียว ชาที่มีชื่อเสียงก็เช่น ชาหลงจิ่ง จากซีหู หังโจว ชาปี้หลัวชุน จากไท่หู เจียงซูและ ชาเหมาเฟิง จากหวงซาน เป็นต้น
ชาอูหลง เป็นชาที่ผ่านกระบวนการหมักให้อยู่กึ่งกลางระหว่างชาเขียวและชาดำ ชาอูหลงค่อนข้างแพง เก็บไว้ได้นาน ดังนั้น ยิ่งนานยิ่งเก่าก็ยิ่งดี และชาชนิดนี้ก็ไม่เหมือนใบชาประเภทอื่น ชาที่มีชื่อเสียงอยู่ที่ ชาเถี่ยกวนอิน หรือ กวนอิมเหล็ก จากฝูเจี้ยน เป็นต้น
ชาดอกไม้จะใช้ชาแดง ชาเขียวและชาอูหลง แต่จะผสมดอกไม้ที่มีกลิ่นหอมเข้าไปด้วย ชาที่มีชื่อเสียงก็คือชามะลิจากฟูเจี้ยน
ชาอัดแท่ง (จิ่นยาฉา) เป็นการบีบอัดชาให้เป็นรูปร่างต่างๆเป็นสี่เหลี่ยมแท่งอิฐ วงกลมและเป็นจาน ชาที่ดีก็มีชาผู่เอ๋อ ของหยุนหนาน และชาโถว่ ของซื่อชวน เป็นต้น
ประเทศจีนเป็นประเทศที่กว้างใหญ่ ประชากรมากพื้นที่ต่างถิ่นก็แตกต่างกัน การดื่มชาจริงไม่เหมือนกัน
ในอดีต ผู้คนชอบจะต้มชาโดยใส่ ต้นหอม ขิง เกลือ ส้ม เพิ่มลงไป เมื่อมาถึงราชวงศ์เหยียน ก็ไม่ได้เป็นการดื่มชาเพียวๆอีกต่อไป การดื่มชา ต้องได้รับกลิ่นที่แท้จริงจากใบชา การชงชาก็ต้องใช้เวลาในการชง ประมาณ 10 นาที เพื่อให้เข้าถึงรสชาติของชา ทุกวันนี้พวกเราก็ยังคงชงชาเช่นนี้อยู่
สามารถกล่าวได้ว่า คนเหนือชอบดื่มชาดอกไม้ เจียงซู เจ้อเจียงชอบดื่มชาเขียว ฟูเจี้ยนกับกวางตุ้งชอบดื่มชาอูหลง ชนกลุ่มน้อยก็จะใส่ยมลงไป ใส่เกลือก็เรียกชานม ชาวธิเบตก็จะชาอบกินชาใส่นมเนยและเกลือ เรียกชานมเนย
การดื่มชาของจีน น้ำเป็นสิ่งที่สำคัญที่สุด ถ้าน้ำที่ใช้ชงดี ชาก็จะมีรสชาติที่ออกมาดี เช่น ถ้าจะดื่มชาซีหูหลงจิ่นฉา ต้องใช้น้ำจากบ่อน้ำแร่ จาก虎跑泉 (หนองเสือวิ่ง) ไปชงก็จะได้รสชาติของชาอย่างแท้จริง น้ำชนิดอื่นไม่ได้ ชาวจีนกล่าวไว้ว่า ใช้น้ำกับชา น้ำที่ดีที่สุดคือน้ำแร่ นอกนั้นใช้น้ำจากแม่น้ำได้ และนอกเหนือจากนั้นคือน้ำบ่อ ถ้าใช้น้ำประปาจะทำให้รสชาติของชาออกมาแน่กว่าน้ำชนิดอื่นๆที่กล่าวมา
การใช้อุปกรณ์ชงชาต้องพิถีพิถันเป็นพิเศษ ต้องใช้ขนาดเล็กที่สุด ต้องทำจากเครื่องปั้นดินเผา รองลงมาเป็นแก้วที่ทำจากกระจกแต่ไม่นิยมแก้วโลหะ
ในประเทศจีน การดื่มชาถือเป็นศิลปะแขยงหนึ่ง ถ้าดื่มแก้วโตๆใบใหญ่ๆ ดื่มเพื่อความกระหาย ไม่ถือเป็นการดื่มชาเพื่อให้เข้าถึงรสชาติของมัน วิธีการดื่มชา เรียกว่า(การจิบชา) 品茶 จิบชาทำอย่างไร ก็สามารถทำได้โดยดังนี้ เมื่อได้ถ้วยชาก็ให้ดมกลิ่นของน้ำชานั้น เรียกว่า (ดมกลิ่นชา) 闻香 หลังจากนั้นจึงพิจารณาดูสีของชา เรียกว่า (พิจารณาสี) 观色 หลังจากนั้นจึงจิบชาเพื่อให้ได้รับรู้ถึงรสชาติของชานั้น จิบอย่างช้าๆ เรียกว่า (การลิ้มรส) 赏味

ประเพณีการดื่มชา

ในสมัยโบราณการดื่มชาค่อยข้างจะอยู่ในชนชั้นที่มีระดับ จะเป็นกิจกรรมของพวกชนชั้นสูงและค่อนข้างมีฐานะ พวกบัณฑิต นักปราชญ์ เวลาจะเขียนกลอน พรรณนาต่างๆหรือวาดภาพก็จะมีชาเป็นส่วนประกอบ เพราะว่า ชาจะเป็นตัวช่วยให้พวกเค้าเกิดมโนภาพและสร้างบรรยากาศ จากกลิ่นหอมของใบชาจะทำให้พวกเขาเหล่านี้เข้าถึงสิ่งที่พวกเขาจะสรรค์สร้างออกมาได้ นักปราชญ์เหล่านี้ก็จะเขียนเรื่องราวเกี่ยวกับชามากมาย มีการประเมินว่า ที่ผ่านมาบทกวีเขียนเกี่ยวกับชามีมากกว่า 1000 บท

ในสมัยโบราณ ผู้ชายและผู้หญิงจะแต่งงานก็ต้องมีการดื่มชา มาเป็นสินสอดหรือการหมั่น และจะมีการรับน้ำชาจากฝ่ายชาย เรียกว่า “การรับชา” นิยายคลาสสิก เรื่อง ความรักในหอแดง ก็มีคำพูดที่หวังซีเฟิงพูดกับหลินไต้หยู่ว่า ในเมื่อคุณดื่มชาที่บ้านฉันแล้ว ทำไมคุณยังไม่เป็นสะใภ้ของฉันละ การรักชาก็มีมานานแล้วในปัจจุบันการมอบชาให้เป็นของขวัญก็ถือเป็นการแสดงความเคารพ ความมีน้ำใจแก่ฝ่ายตรงข้าม ปัจจุบันแขกมาบ้าน เจ้าบ้านก็จะยกชาให้ดื่ม
ปัจจุบัน ชาวกวางโจวและหยางโจวก็จะดื่มชาในตอนเช้า หลังจากพวกเขาตื่นนอนก็จะมาดื่นชากันที่ร้านน้ำชา จากนั้นก็กินข้าวกันอย่างสบายๆ ส่วนเซี่ยงไฮ้ก็จะดื่มชาในตอนเย็น ตอนค่ำหลังอาหารค่ำ จะนั่งดื่มชากัน คุยกัน ในประเทศจีน เสฉวนจะมีร้านน้ำชาเยอะมาก เปิดทั้งเช้าทั้งเย็น ร้านน้ำชาก็จะมีผู้คนมานั่งมาก

การทำอาหารจีน

การทำอาหารจีนเป็นวัฒนธรรมอันล้ำค่าที่สืบทอดกันมาของชาวจีน และมีชื่อเสียงแพร่หลายในปัจจุบัน ยุโรป อเมริกา เอเชียก็ได้มีร้านอาหารจีนอยู่ทั่วทุกมุมโลก เมื่อไปถึงเมืองจีนก็ต้องลิ้มลองอาหารจีน ถ้าได้ไปลิ้มลองรสอาหารจีนสักครั้ง มันเป็นความปรารถนาของอีกหลายประเทศ

ประวัติศาสตร์อันยาวนานของการทำอาหารจีน

ในสมัยโบราณ ในยุดเริ่มต้นของสังคมมนุษย์วานรจีนก็สามารถใช้ไฟในการย่างเพื่อให้เนื้อสุก เป้นการเริ่มต้นการทำอาหาร อักษรคำว่า “炙” (แปลว่า ปิ้ง) ตัวอักษรนี้คือการนำเอาเนื้อไปย่างไว้บนไฟ
ในยุดของเครื่องปั่นดินเผาหรือยุคของสังคมทาส ในเวลานั้นก็จะมีเครื่องปั้นดินเผา เครื่องสำริด ก็ได้ขุดพบเครื่องหุงต้มเป้นจำนวนมาก เหมือนกับที่พบเห็นทั่วไปคือ “鼎” ที่เอาไว้ต้มเนื้อ ปัจจุบันก็คือหม้อนั่นเอง และมีอุปกรณ์อีกชนิดหนึ่งเรียกว่า “甑” มีลักษณะคล้ายเครื่องปั้นดินเผา ตรงก้นจะมีรู เพื่อให้ความร้อนหรือไอขึ้นมา ซึ่งเรียกว่าการนึ่ง จากการที่คนจีนรู้จักการประกอบอาหาร แสดงให้เห็นถึงการพัฒนาทางด้านการทำอาหารเป็นจุดกำเนิดหรือพื้นฐานของการทำอาหารที่หลากหลายในยุดต่อๆมา
สมัยช่วงสังคมทาส พวกเจ้านายหรือผู้ปกครองบ้านเมืองก็จะใช้แพะ วัว หมู หมา ไก่ ใช้เซ่นไหว้บูชาบรรพบุรุษ ไหว้เทพเจ้าฟ้าดิน หลังจากเส้นไหว้ พวกเขาก็จะกินอาหารเหล่านี้ นี่ก็เป็นจุดที่แสดงให้เห็นถึงจุดกำเนิดของรูปแบบงานรื่นเริงหรืองานเลี้ยงในยุดแรกๆ ในหนังสือโบราณในราชวงศ์โจวมีการบันทึกชื่ออาหาร “八珍” เป็นอาหารที่มีรสชาติอร่อย หนังสือเล่มนี้ก็ถือว่าเป็นตำราอาหารที่เก่าแก่ไว้ให้ชนรุ่นหลัง
ในสมัยสังคมศักดินา ก็ได้มีการพัฒนาเทคนิค หรือฝีมือในการทำอาหารมากขึ้น อาหารชนิดต่างๆก็เพิ่มมากขึ้น นักกวีชื่อดังชื่อ 屈原ก็ได้เขียนในหนังสือเล่มหนึ่งที่มีชื่อว่า (หนังสือเรียกวิญญาณกลับมา) （招魂）ในหนังสือที่เขียนเป็นบทกวี เขียนถึงอาหารที่มีความประณีต มันก็ได้กลายเป็นตำราอาหารเล่มแรกในสมัยจั้นกว๋อ (战国) ที่บรรยายอาหารของชาวจีนทางตอนใต้ในยุดนั้น และยังมีการนำ ข้าว ธัญพืช ข้าวสาลีมาทำเป็นอาหารหลัก รู้จักการใช้วัว แพะ ไก่ เป็ด ปลา ม้า มาทำเป็นกับข้าว อาหารเหล่านี้มีรสชาติเค็ม เปรี้ยว หวาน ขม เผ็ด ดูจากรสชาติอาหารที่หลากหลายแล้วน่าจะมีการนำเอาเครื่องปรุงมาใช้ในการประกอบอาหาร จากการขุดพบคัมภีร์โบราณ (เป็นคัมภีร์ไม้ไผ่สลักตัวอักษรเอาไว้) พบที่สุสานของกษัตริย์องค์หนึ่งในเสฉวน ในสมัยซีฮั่น (西汉) มีอาหารที่มีความประณีตกว่าร้อยชนิด ในสมัยราชวงศ์ถัง (唐代) （食谱）ได้มีการบันทึกการทำอาหารไว้ถึง 141 ชนิด ในสมัยราชวงศ์เหยียนหมิงและชิง (元明清时期) เทคนิคการประกอบอาหารเริ่มจะเข้าที่เข้าทาง ในสมัยราชวงศ์ชิง (清代) （随园食单）ได้มีการบันทึกไว้ถึง 326 ชนิด สมัยราชวงศ์ชิง (清代) ในพระราชวังเป่ยจิง (ของที่กษัตริย์เสวย) ก็ได้มีการรวบรวมอาหารมาจากภาคใต้และภาคเหนือและแต่ละชนเผ่ามารวมกัน มีอีกกว่า 180 ชนิด แมนจู (满族) ยังมีอาหารที่เป็นเส้นอีกกว่า 44 ชนิด ยังมีของว่างและผลไม้ (ของที่กษัตริย์เสวย) ถือเป็นสมัยที่มีอาหารหรูหราที่สุดของประเทศ
เมื่อไม่นานมานี้ พ่อครัวชาวจีนก็ได้ทำการศึกษาค้นคว้าเทคนิควิธีในการประกอบอาหาร มีการสร้างสรรค์สิ่งใหม่ๆขึ้นมา ยิ่งทำให้เกิดความสมบูรณ์ในด้านอาหารมากขึ้น

ลักษณะพิเศษของอาหารจีน

การประกอบอาหารของพ่อครัวคือการปรุงปรับแต่งรสชาติ “烹”คือการใช้ความร้อนในการประกอบอาหาร ทำให้อาหารมีรสชาติหอมออกมา ;“调”คือการเติมเครื่องปรุงต่างๆ เราสามารถเลือกใช้ได้หลายชนิด อีกด้านหนึ่งก็ทำให้ลดความคาวของอาหารและความเลื่อนหายไป อีกด้านหนึ่งก็ช่วยเพิ่มรสชาติ เปลี่ยนรสชาติจากรสชาติเดียวให้มีรสชาติที่หลากหลาบมากขึ้น
อาหารจีนมีลักษณะสำคัญอยู่ 4 ด้านคือ
-ก็คือสีสัน รสชาติ กลิ่นหอม รูปแบบ
อาหารจีนที่สำคัญก็จีมีความสวยงาม มีกลิ่นหอมของอาหาร ความสดของรสชาติอาหาร รสชาติอาหารจะเป็นสิ่งสำคัญที่สุดถ้ารสชาติดี สีและกลิ่นก็จะไม่แย่ไปกว่านี้ ความต้องการพื้นฐานของอาหารจีนก็มีสีกลิ่นรสรวมกัน เมื่อมองดูแล้วการทำอาหารจีนก็เหมือนกับศิลปะแขนงหนึ่ง มิน่าละ มีคนพูดว่า พ่อครัวที่มีเทคนิคการทำอาหารก็เป็น “พ่อครัวที่มีศิลปะในการประกอบอาหารที่สูงส่ง”
-วิธีการทำอาหารที่หลากหลาย
อาหารจีนมีการทำที่หลากหลาย เช่น การคั่ว ผัด ต้ม ทอด ย่าง ปิ้ง ตุ๋น ลวก นึ่ง คลุกเค้า.... .... การทำอาหารที่สำคัญอีกอย่างคือการใช้ไฟและระยะเวลาของการทำอาหาร ก็จะเป็นกรรมมาวิธีในการทำอาหารที่ต่างกันไป
-เครื่องปรุงที่หลากหลาย
เครื่องปรุงที่ให้รสชาติเค็มก็มี เกลือ ซีอิ๊ว รสหวานก็มีน้ำตาล น้ำผึ้ง รสเปรี้ยวก็จะมีน้ำส้มสายชู รสเผ็ดก็จะใช้พริก ต้นหอม ขิง กระเทียม กลิ่นหอมก็จะมีน้ำมันงา ผักชี เหล้า ออกชาๆๆก็จะมี (花椒) เมล็ดของพืชชนิดหนึ่ง มีรสน้อยๆก็จะใส่ผงชูรส นอกจากนี้ยังมีการใช้ยาจีนทำให้รสชาติของอาหารมี กลิ่นหอม หวาน เปรี้ยว เผ็ด เค็ม มีรสน้อยๆเป็นต้นๆและยังมีรสชาติแบบผสมเช่น หวานเค็ม เปรี้ยวหวาน เปรี้ยวเผ็ด ชาๆเผ็ดๆ รสชาติแปลกๆ เป็นต้น นี่ก็เป็นการสร้างสรรค์อาหารของชาวจีนที่ผ่านมานานกว่าพันปี
-ความหลากหลายของอาหาร
อาหารของชาวจีนมีมากมายมหาศาล เกินกว่าที่จะนับได้ ด้านหนึ่งมาจากการประกอบอาหารที่หลากหลาย อีกด้านหนึ่งมาจากวัตถุดิบที่นำมาประกอบอาหาร การทำอาหารหลักโดยใช้เนื้อสัตว์ เนื้อปลาและสัตว์ต่างๆก็ยังมีการใช้อาหารป่าและอาหารทะเลด้วย เช่น เห็ดหูหนู รังนก หูฉลาม ปลิงทะเล หอยเชลล์แห้ง เป็นต้น ก็คือเหล่านี้ก็เป้นอาหารที่มีรสชาติอร่อย
อาหารจีนไม่ค่อยจะใช้วัตถุดิบเพียงอย่างเดียว แต่จะใช้วัตถุดิบที่มากมายหลากหลายมาประกอบอาหาร เช่นอาหารที่มีชื่อของฮกเกี้ยน (福建) พระกระโดดกำแพง ก็ใช้วัตถุดิบกว่า 18 ชนิด มีทั้งอาหารป่าและอาหารทะเลใส่ลงไปในไหเหล้า เอาไปตุ๋นโดยปิดฝาไว้ กลิ่นจะหอมลอยมาเข้าจมูก ผู้คนพูดว่า พระที่ไม่กินเนื้อ เมื่อได้กลิ่นก็ยังปืนกำแพงเข้ามาเพื่อกิน จึงเรียกได้ว่า พระกระโดดกำแพง ก็เลยกลายเป็นอาหารที่มีชื่อเสียง และที่มณฑลเสฉวน(四川) ก็ยังมีน้ำแกงชนิดหนึ่ง ใส่ส่วนผสมกว่า 20 ชนิด นั่นคือ “兼善汤” ก็เป็นอาหารที่ใช้วัตถุดิบหลากหลายอีกประเภทหนึ่ง ใครสามารถบอกได้ไหมว่าอาหารของประเทศจีนมีกี่ชนิด...

อาหารจีนแต่ละพื้นที่

ประเทศจีนมีประชากรมาก มีพื้นที่กว้างใหญ่ ทำให้สภาพภูมิอากาศแตกต่างกัน ความเป็นอยู๋ก็แตกต่าง ผู้คนก็นิยมไม่เหมือนกัน กล่าวได้ว่า คนใต้ชอบกินหวาน เวลาทำอาหารใส่น้ำตาลมาก คนเหนือชอบกินเค็ม เวลาทำกับข้างจะใส่เกลือมาก ชาวซานตง(山东) เสฉวน(四川) หูหนาน( 湖南) จะชอบกินเผ็ด เวลาทำอาหารจำชอบใส่พริก ชาวซานซี (山西) จะชอบกินเปรี้ยว เวลาทำกับข้าวก็ไม่พ้นน้ำส้มสายชู ดังนั้นจึงอธิบายได้ว่า “ใต้หวาน เหนือเค็ม ตะวันออกเผ็ด ตะวันตกเปรี้ยว”
อาหารในประเทศจีนแต่ละที่รสชาติก็จะแตกต่างกัน ตามแต่ละพื้นที่ ก็มีอาหารที่เป็นเอกลักษณ์ใน ซานตง(山东) เสฉวน(四川) กวางตุ้ง (广东) เจียงซู (江苏)และเป่ยจิง(北京) แต่ละที่ก็จะมีรสชาติที่แตกต่างกันไป ในตัวมันเอง เสฉวน(四川) ก็จะมีรสชาติอาหารที่เผ็ดๆชาๆ ซานตง(山东)ก็จะมีอาหารที่อ่อนๆสด รสชาติกลมกล่อมและจืด ที่มีกลิ่นหอมก็จะเป็นรสชาติของกวางตุ้ง (广东) มีรสชาติจืดๆมีกลิ่นหอมๆก็จะเป็นรสชาติของที่เจียงซู (江苏) ส่วนความกรอบและกลิ่นหอมก็ต้องที่เป่ยจิง(北京) แต่ละที่ก็จะมีอาหารที่ขึ้นชื่อ เช่น ซานตง(山东)ก็จะเป็นปลาในแม่น้ำฮองเหอผัดเปรี้ยวหวาน เสฉวน(四川) ก็จะเป็นไก่ผักเม็ดมะม่วง กวางตุ้ง (广东)จะเป็นหมูหัน เจียงซู (江苏)ก็จะเป็นปลานึ่งต่างๆ และเป่ยจิง(北京)ก็จะเป็นเป็ดปักกิ่ง เป้นต้น ปัจจุบันก็มีอาหารเหล่านี้ในประเทศจีน ไม่จำเป้นต้องไปกินในแต่ละพื้นที่ ก็จะมีร้านอาหารเหล่านี้อยู่ทั่วไป แต่อาหาร “龙虎斗” ต้องไปกินที่กวางตุ้ง(广东) เท่านั้น เพราะที่นี่จะมีการนำเนื้องูกับเนื้อแมวเอาไปผัด เป็นอาหารที่คนทั่วไปไม่กล้ากิน

Build-up1: I was interested in the time machine that I was researching. One day, my friend invites me to build the time machine.

Build-up2: I thought if I could finish building a time machine. I would be happy because I could use it to go to the future and travel in the future time. I was thinking before I slep.
What happen when your dream? (happy): I dream that I could finish building the time machine. I could go to the future time and travel to many countries around the world.
Question: Which time in the future and where did you go? – In the year 3000. I will go Japan first.
What happen when your dream? (unhappy, or problem happen): When I traveled in the future, I could go to anywhere in the future. But, the time machine had an accident. And I couldn’t go back to the present time. I felt worried and scared.
IV You woke up from the bed, what do you think?: When I woke up. I thought it was very exciting dream. It taught me that something shouldn’t know when it wasn’t in the right time. You shouldn’t change something in the past time or know something in the future. It makes something wrong.

What happen when your dream? (happy): In my dreamt I saw pop music star looking me. He gave me a love letter. I felt so glad and then he came to talk with me first.
Question: What did he say you to (or you to him)? -He said that he used to feel like me when he was young.
What happen when your dream? (unhappy, or problem happen): When was looking at me, I was so shy my face became red and then he talked to me for so long. We so happy and we often saw movies together.

Build-up2: Before I slept, I was unhappy because I thought that I would never get anything that I witch for because a genie is not true.
What happen when your dream? (happy): When I slept, I dreamt that I went to the forest, suddenly I saw something shining far away, and then I saw a jewie popped out of the bottle, and granted me three wishes. I was excited and happy.
Question: What three wishes did you choose? - I choose to be beautiful, to be rich and to be a perfect girl.
What happen when your dream? (unhappy, or problem happen): While I saw a genie popped out of the bottle I was excited and happy. A genie granted me three wishes so I chosen to be beautiful, rich and perfect girl. I was happy because I thought that it was real but it couldn’t be real. So I was disappointed and I cried.
IV You woke up from the bed, what do you think?: When I woke up, I felt joke because a genie couldn’t be real and was impossible but I felt excited. Although it was just a dream. I learned that being just myself is the best.

What happen when your dream? (happy): In my dream, I went to the temple and met an old woman and she gave me power and told me, “If you eat it you would be have strong arms.”

What happen when your dream? (unhappy, or problem happen): Then I ate a power and I suddenly got a strong arms, but my body became a Gorilla, it was very ugly. Then an old woman told me again “You have strong arms and you should make a merit”. (What did you do with your strong arms in the dream?)
IV You woke up from the bed, what do you think?: When I woke up, I felt good because it was just a dream. But my dream taught me that when you make a merit you will get a good thing back.

What happen when your dream? (unhappy, or problem happen): While I dreamt when I was a kid. I could learn anything that I liked and became famous. Then, I was very bored I didn’t want to be a kid anymore because it too hard for a kid.
